WThis is a simplified interpretation of a drink from our latest menu. It's a party-sized pre-mixed that is packed with the flavours of a Christmas time, making it excellent for hosting a celebration. Save the extra syrup for morning drinks, puddings, or for additional servings of this cocktail.
Bikini Recipe
Serves 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Method
Making the Syrup: Put every items in a pan, bring to a light boil, agitating to dissolve. Next, take off the burner and let it to cool down entirely. Pour into an sealable bottle, close it and store in the refrigerator, where it will keep for about a month.
For the Premix: Pour the specified liquid ingredients into one sizeable container, let it rest for 60 minutes, then pass it through , ideally through cheesecloth, so it's perfectly clear.
To serve: Pour 85ml of the batch mix into your cocktail shaker containing ice, gently stirring carefully for a minute until cold. Strain into a chilled martini glass or similar, top with a few cranberries adding the final touch using a brief mist of mandarin oil above the glass.
